Ingredients:

1 cup Cauliflower, grated
1 cup Paneer, grated
2 Green Chilies
3 tbsp Coriander Leaves
3 tbsp Wheat Flour (see notes for Keto replacement)
2 tbsp Bread Crumbs (see notes for Keto replacement)
Salt, as needed
1 tsp Roasted Cumin Powder
Oil, as needed

Instructions:

Boil hot water in a vessel. Add cauliflower florets and cook until tender. Strain and set aside.
Using a food processor, grate the cauliflower and paneer into fine grains. Alternatively, you can grate or crumble them manually.
Grate the green chilies and coriander leaves. Add them to the grated cauliflower and paneer.
To the mixture, add wheat flour, bread crumbs, salt, and roasted cumin powder. Mix well to form a dough.
Divide the dough and shape it into equal-sized patties. Refrigerate for 30 minutes.
Heat a pan for shallow frying. Shallow fry the shaped tikkis until golden and crisp on both sides.
Drain excess oil on a paper towel and serve hot.

Notes:

Serve the tikkis hot with green chutney or tomato sauce.
Handle the tikkis carefully while flipping and cooking.
Cauliflower can be replaced with broccoli for variation.
The tikkis can also be deep-fried if desired.
For Keto version, replace wheat flour with almond powder and bread crumbs with egg.
