OLD FASHIONED ORANGE CANDY

Wash the oranges thoroughly.
Cut off the tops and bottoms of the oranges.
Slice each orange into thin, even rounds, about 1/4 inch thick.

In a large pot, add the orange slices and enough water to cover them.
Bring the water to a boil, then reduce the heat and let the oranges simmer for about 10 minutes.
Drain and repeat this process twice to remove any bitterness from the oranges.

Step 3: Create the Syrup

In the same pot, combine the sugar, 1 cup of water, lemon juice, and a pinch of salt.
Bring the mixture to a boil while stirring to dissolve the sugar.
Let it simmer for about 10-15 minutes until the syrup thickens and reaches a soft ball stage. You can check this by dropping a little syrup into cold water; it should form a soft ball.
